So here is the deal…no matter what diet or food plan you are following and no matter what your ultimate goal is, vegetables have to be a part of it. It really comes down to basic math. Non-starchy vegetables, which are all vegetables except for peas, corn and potatoes are very low in calories – around 25 calories for a fist size portion (ish). They also happen to be full of fiber. Therefore they add bulk to any diet without the caloric punch.
Eating a high protein diet? Fine, you can only munch on steak and chicken for so long and since you are trying to avoid starches you are going to need to have vegetables available.
Eating a low fat diet? Fine too, but instead of munching on starches all day you are going to have to have vegetables in your diet to balance things out.
Want to avoid carbs? You can never stop eating carbohydrates or will hurt yourself. Non starchy vegetables are carbohydrates!!! However they are low in calories, have no added sugar and are full of fiber. Eat them! And avoid the sweets!
Want to lose weight? Fantastic. Vegetables will allow you to do this without feeling totally deprived.
Want to build muscle? Great too. While protein is needed in your diet you can only eat so much – vegetables have to be a part of the plan.
Just want to live a healthy lifestyle? I do too! Vegetables have to be part of your daily life. They are full of vitamins, minerals and nutrients that could prevent disease and improve your health.
Lets all remember I really didn’t start eating vegetables until I was 20 years old. If I can do it anyone can!!!! For me, it is all about flavor and texture. I have figured out how I like to eat most vegetables and what easy spices, herbs, and dressings I need to add extra flavor. Lemon juice, vinegar, the middle eastern spice za’ater, capers, hot sauce, preserved lemon vinaigrette, pickled vegetables and some sort of salsa are always in my kitchen. What works for you?
