I am enjoying some much needed time off this week and came to New York City to play with some of my favorite people. I do love this city! The energy, the people, the shopping and of course…yum…the food. It is the simple things that make me happy here. I don’t need the fancy restaurant or the hot spots – I love New York for all the little shops that surprise you and turn out to be just perfection.
My dear friend Marina took me to her favorite coffee shop, The Annex in Fort Greene, Brooklyn for breakfast Wednesday morning. I walked in and immediately was sold because they served my beloved Blue Bottle Coffee – a personal fave. Many people (yes Dad…you) think this coffee is totally hyped up and a bit much but I love the taste and everything about it. So far so good on this coffee joint!
As I am standing at the counter deciding what to eat I notice the most adorable thing – a kale egg basket! What is that you may ask?? Well I asked and have now discovered my new favorite food. Click here to see a picture. Saute kale in garlic and olive oil and then line muffin tins cups with the cooked kale. Crack an egg in each cup and bake and viola – kale egg baskets! Absolutely divine. You can enjoy them at room temperature or heat them up. A great source of protein and veg – a wonderful breakfast or even a mid morning or mid afternoon snack at work! You can make a dozen on Sunday and eat them as snacks for the week. I am clearly obsessed! A bit ridiculous that this all makes me so happy, but it really did just make my day!
I am going to try making them this weekend so will report back with a proper recipe once I figure it out. Will keep you posted.
